“忙并快乐着”——这是很多餐饮人近期的共同感受。随着疫情防控政策密集优化调整,国内餐饮市场加快复苏,大街小巷再次点燃浓浓烟火气。刚刚过去的元旦假期,位于山东济南大观园景区的“城南往事”客流量猛增。“1号晚上11个房间全满,等餐区也坐得满满当当,一直到晚上10点半还没忙活完。”店长王一举说。
让王一举兴奋不已的,还有年夜饭的预订情况。“11个房间全订满了,大年初二也订出去好几间了。”他说,元旦和春节是餐饮市场复苏的试金石,大家有信心恢复到疫情前的状态。
近期,各地相继推出政策举措,加快推进餐饮市场复苏:重庆通过分批发放消费券、启动跨年迎新消费节等措施,促进餐饮零售等消费;武汉餐饮业协会联合餐饮企业推出煨汤滋补美食节、邻里年货节等系列活动;天津启动跨年暖心购物季,带动商圈烟火气加速回归……
美团数据显示,多地餐饮消费出现不同程度恢复,线下门店客流逐步增长。元旦假期前两日,全国堂食线上交易额较前一周同期增长超1倍。其中,江苏、浙江等地相关交易额增长超230%。

“专业智能设备的应用,不仅减轻了人员工作压力,提高生产效率,还能最大限度保证每一杯产品的口感都是一致的。”喜茶相关负责人说,企业组建了专业智能设备研发团队,目前已推出3款智能设备并在门店进行大规模应用。
中国商业联合会日前发布的“2023年中国商业十大热点展望评述报告”显示,作为供给端升级核心推动力之一,数字化为餐饮业带来深度变革,未来,餐饮市场竞争不仅体现在企业之间产品和服务的竞争,还体现在前端场景和客流量的竞争、后端系统和供应链的竞争。
